Sustainable Hour: ESG in Focus - Powered by Erste brings the final sustainability-themed event of the year, turning attention to food systems, responsible consumption, and circular models in gastronomy and the event industry. Instead of abstract ESG discussions, the gathering at Urania opens concrete questions: how Croatian and global food practices are shifting under the pressure of the climate crisis, what systematic reduction of food waste means for hospitality and households, and how brands and industries can transform their operational models to become compatible with decarbonization goals.
According to data from IDOP (Directory of Long-Term Sustainable Practices), more than 286,000 tons of food are thrown away annually in Croatia, with restaurants accounting for a significant portion. Sustainable cooking practices - from precise planning to full use of ingredients - thus become a genuine lever of social impact, not merely an ethical gesture.

The project Eat Me to the End introduces a necessary shift in how food leftovers are perceived in the hospitality sector. Developed in collaboration with the media house 24sata, the project has sparked public discussion about a simple yet rarely practiced idea: managing uneaten restaurant food in a way that reduces waste while encouraging consumers to behave more responsibly. A project representative will present its impact to date and the mechanisms that are changing everyday habits.
Erste Bank offers insight into European and global ESG initiatives of the Diners brand, particularly in the segment of supporting sustainable hospitality and gastronomy projects. The focus is on models in which the financial sector becomes a partner in achieving decarbonization goals and in promoting circular economic frameworks that reduce ecological footprints.
Chef Zdravko Tomšić, educator and one of the pioneers of Croatia’s fine-dining scene, will analyze what it truly means to apply sustainability principles in a professional kitchen. Using practical examples, he explains how restaurants can achieve lower waste, greater resource efficiency, and sustainable standards of flavor. He will also address how similar principles can be implemented in households through rational planning, proper storage, and thoughtful cooking.
Circular models in the event industry will be presented by Daniel Fischer, Sales Manager at RevoUnion, whose reusable packaging challenges the dominant logic of single-use consumption. Visitors will learn about the technical and logistical systems that reduce waste at festivals and large events, as well as their applicability within a broader urban context.
The moderated discussion will explore how these varied practices can be integrated into a sustainable system, who carries responsibility, and how consumers, industry, and institutions can align their goals.
The program concludes with a short Q&A session followed by informal socializing with a tasting of dishes prepared according to zero food waste principles - demonstrating in practice that sustainability is not a limitation, but precision, responsibility, and thoughtful culinary logic.
